Principles of structural, mechanical, and dynamic characteristics of food systems. Basic information and fundamental terms in rheology, meas-urement technology for different food matrices, mechanical strain, dy-namic rheology. Measuring systems and principles, methods in structure analysis, analysis of measurement data and modelling.
