In this module, special topics of food microbiology and hygiene such as microbial growth in different food commodities, growth parameters, food spoilage, preservation methods, fungi and fungal toxins, probiotics, pathogenic bacteria, and methods for the detection of microbes in foods. Concepts of hygiene in food processing and HACCP are taught.
